Dr. Nishinari is Currently working as a specially appointed professor at Glyn O Phillips Hydrocolloids Research Centre, Department of Food and Pharmaceutical Engineering, Hubei University of Technology since 2013. After graduation from the University of Tokyo, he joined National Food Research Institute (Japan), then became a professor at School of Human Life Sciences of Osaka City University. He stayed in various laboratories as a visiting professor at Glyndwr University, Ecole Superieure Physique et Chimie Industrielle (Paris), Shanghai Jiao Tong University, thus has many international friends. He has been working in food hydrocolloids, texture, and rheology. He is an IAFoST Fellow.
