Gilles Mithieux currently directs a research laboratory at the National Institute of Health and Medical Research in Lyon, entitled "Nutrition, Diabetes and the Brain", which is interested in the endogenous production of glucose and its role in diabetes. He trained in biochemistry during his doctorate, then in cell biology and endocrinology during his post-doctoral training, he turned to the field of glucose metabolism.

Gilles Mithieux and his laboratory notably discovered the neoglucogenic function of the intestine, previously known in the liver and kidneys. They then demonstrated the role of intestinal gluconeogenesis as a signal for the brain, capable, under the influence of certain foods (proteins and fibres), of regulating feelings of hunger and satiety and whole-body energy homeostasis. This discovery will be the origin of the “IGN” project.
