Course Description:
There is increased interest in reducing intake of animal products. Adolescents in particular are likely to experiment with diet and eager to express their individualism. Are you prepared to provide nutritional care for an adolescent who is a vegetarian or vegan? Scientific evidence suggests a positive relationship between a vegetarian or vegan diet and reduced risk of disease. The stricter the form of vegetarianism, however, the more care must be taken to ensure adequate nutrition. Regardless of food restrictions, a carefully planned vegetarian or vegan diet can be nutritionally adequate and healthful for children of all ages. At the same time, vegetarian and vegan teens who consume large amounts of foods such as soda, pizza, French fries, and ice cream or non-dairy desserts could be putting themselves at higher risk for developing chronic disease from excess fat, sugar, and salt. Learn how to ensure that the diet of a vegetarian or vegan teen will be nutritionally sound.
Conference Objectives:
The goal of this continuing education program is to update dietitians’ and nurses’ knowledge of the special nutritional concerns of vegetarian and vegan teens and how to ensure that their diets are nutritionally adequate. After you study the information presented here, you will be able to:
• Discuss the nutrient concerns for teenagers who adopt a vegetarian or vegan diet
• Choose alternative sources of various nutrients that may be lacking in a vegetarian or vegan diet due to food restrictions
• Recognize the warning signs of an eating disorder and the relationship to vegetarianism and veganism
• Propose reasonable solutions and assurances to parents who are concerned about their vegetarian or vegan teenagers
