This 1-hour course provides an overview of nutrition education to guide counseling for patients to make more informed decisions during food purchases and preparing balanced meals at home. Topics covered include:
• identifying healthier choices and reading food labels by using consumer resources such as the Nutrition Facts Panel, Facts Up Front, and the Heart-Check mark.
• Tools and materials from the Simple Cooking with Heart program as resources for patients/clients to gain and maintain culinary skills through low-cost, nutritional meal preparation.
• Health and nutrition professionals, along with anyone motivated to create lasting behavior change in eating habits, will find this course useful.
Objectives:
• Summarize the current state of population health and explain why diet quality is critical.
Describe key elements of a science-based, heart-healthy eating pattern.
• Assess patient/client eating patterns and employ theory-based counseling strategies to engage them in behavior change discussions about healthy food selection and preparation.
• Summarize the impact of nutrition labeling information on food selection decisions as demonstrated by consumer research.
• Demonstrate ability to verbalize how the Heart-Check Mark and Facts Up Front packaging symbols can help consumers to make smarter food choices and build healthy eating patterns.
• Incorporate Simple Cooking with Heart resources into preventive health and lifestyle change-related counseling as an evidence-based tool for behavior change.
