Winter Conference 2022/23 - The architecture of food: processing, structure and health conference is organized by The Nutrition Society (NS) and will be held from Jan 24 - 25, 2023 at The Royal Society, London, England, United Kingdom.

Overview:
The traditional reductionist approach, which considers the impacts of macro- and micronutrient intakes and the effects of non-nutrient food phytochemicals, needs to consider the significant influences that food structure and processing have. As a result, the main focus of this conference will be on how food composition and its processing affect one's health. The symposia at the conference will discuss a wide variety of topics, including the benefits and drawbacks of various food processing strategies, the bio-accessibility, and bioavailability of nutrient and non-nutrient components in whole foods, and the effects that shifting dietary patterns have on one's health.

Purpose of the Conference:

To gain a deeper understanding of the role that unprocessed whole foods and food processing play in the health impacts of both nutritional and non-nutrient bioactive compounds, with a particular emphasis on the primary prevention and management of chronic diseases.

Objectives:

• To examine a variety of cases in which the processing, matrix, or structure of food is a primary factor in determining the consequences on one's health
• To determine whether or not this has any bearing on the dietary rules that are based on food
