Victoria was an undergraduate at Cambridge University, receiving a BA in Natural Sciences. She performed her PhD research in London at Cancer Research UK, working with Julian Downward and Gerard Evan, investigating the mechanism of caspase activation during programmed cell death. In 2003, Victoria moved to USA, working with Michael Cole at Princeton University and Dartmouth College, investigating how c-Myc oncogene functions in breast cancer.

In December 2007, Victoria moved to the College of Life Sciences, University of Dundee, setting up a lab in the Division of Cell Biology and Immunology funded by an MRC Career Development Award. Her lab investigates how c-Myc regulates mRNA methyl cap formation, and the contribution this has to c-Myc function. The Cowling lab is also exploring the therapeutic potential of interfering with methyl cap synthesis in cancers and trypanosome infection
