Sarah Booth is interim director of the Jean Mayer USDA Human Nutrition Research Center on Aging, as well as a senior scientist and director of the HNRCA's Vitamin K Laboratory. She also is a professor in the Biochemical and Molecular Nutrition program at the Friedman School. Booth's research interests include Vitamin K food composition, dietary assessment, nutritional assessment, and bioavailability.
