Professor Mousa Numan Ahmad specializes in human nutrition and dietetics and is now a senior professor of clinical nutrition/ biochemistry/ cardio metabolism here in the Department of Nutrition, Food Technology, Division of Human Nutrition and Dietetics, the University of Jordan. He is one of the founding members of this department. Professor Mousa has served as Head of this Department (2007-2012), Deputy Dean, and Dean of Scientific Research, at the University of Jordan (2018-2019). He has also headed the Department of Food and Nutrition and served as Dean of the College of Allied Medical Sciences, Applied Science Private University, Jordan (Sabbatical leave visit 1993-1994). Professor Mousa holds a Bachelor of Science degree from the University of Jordan and degrees of Master′s and Doctorate of Science in Human Nutrition and Dietetics from King’s College London, University of London, UK.

Mousa actively participates in the scientific, academic, and management developments of this department for more than 30 years of service. This includes the establishment, development, and organization of laboratories, curricula, conferences, workshops, and training courses in human nutrition and dietetics. In this department, Professor Mousa teaches several undergraduate and postgraduate courses in the field of human nutrition and dietetics: human nutrition, metabolism, dietetics, diet therapy, clinical nutrition, nutritional biochemistry and bioenergetics, nutrition of carbohydrates, fats, and proteins, clinical nutrition for Nursing and Pharmacy students.

Mousa research interests are clinical nutrition/ biochemistry/ cardio metabolism. To date, Professor Mousa has published more than 95 scientific papers in peer review journals, supervised more than 75 master's and doctoral students, and participated in more than 150 committees for postgraduate defense examinations, and about 75 committees for doctoral and master's proficiency examinations. Currently, he has 10 research works in progress. He has taken two sabbatical years' leave. Professor Mousa is now the editor-in-chief of the Jordan Journal of Agricultural Sciences, editor of 4 peer-reviewed scientific journals, and reviewer for more than 35 international scholarly journals. Professor Mousa has served as a scientific research panelist for the Jordan Scientific Research and Innovation Support Fund and the Qatar Research Fund and as a consultant to the World Health Organization, the Eastern Mediterranean Regional Office, Cairo, Egypt.

Mousa has also worked as a member of the IRB and Scientific Research Council, University of Jordan, and the Medical and Health Professions Licensing Committee, Jordan Ministry of Health. Professor Mousa has many scientific, academic, and advisory links at the national, regional, and international levels. He has attended many conferences and workshops and participated in many training courses and consultations. He has also organized two international conferences and two workshops in nutrition and dietetics in Jordan and participated in two nutrition accreditation committees, the Jordan Ministry of Higher Education and Scientific Research. In the community, Professor Mousa is an active member of many governmental and nongovernmental societies and committees.
