Mindy A Patterson, PhD, RDN is an Associate Professor of Nutrition at Texas Woman's University (TWU) Institute of Health Sciences in Houston, Texas. As a Registered Dietitian Nutritionist, Patterson examines dietary intake patterns, including foods and supplements high in resistant starch, for the prevention of obesity-related disorders. She also identifies microbiome profiles eliciting specific physiological responses to resistant starch and other dietary components. She has received external funding to study the food sources and physiological outcomes of this bioactive compound. Patterson is a Fellow of the Texas Academic Leadership Academy, a Distinguished Dean's Fellow, and the academic advisor for the Micheal E. DeBakey Veterans Affairs Medical Center dietetic internship. She also serves as the Chair of the Institutional Review Board at TWU-Houston for the 2021-23 academic year. Her research has been featured in Women's Health, New Scientist Magazine, Prepared Foods Magazine, Nature Research, and the Houston Chronicle and she has been recognized as a 2023 Houston Role Model in Women in the Fast Lane of STEAM.
