Dr. Matthew Farber founded the Brewing Science certificate program in 2015 at the University of the Sciences, for which he is currently the director. His research interests include innovative applications of biotechnology for the improvement of fermented food and beverages, with a focus on proteases, non-Saccharomyces yeasts, and beer quality. He is the primary inventor on several pending patents including the discovery of Philly Sour, a novel lactic acid yeast, and the creation of Farber Pham Diastaticus Medium, a selective agar medium for isolation of diastatic yeast. In addition to the Brewing Program, he successfully developed a pilot brewery on campus and launched the Malt Beverage Testing Lab for contract quality testing for the brewing industry. The Farber lab also engages numerous commercial clients for consulting or research service contracts.
