Dr. Griffin is an Assistant Professor in Nutrition at Appalachian State University and a Registered Dietitian Nutritionist. She has taught nutrition at the undergraduate level for 10 years. She has a background in public health nutrition and community nutrition, as well as health promotion and wellness.
Before coming to Appalachian State, Dr. Griffin worked as a Public Health Specialist with the Auburn University Supplemental Nutrition Assistance Program-Education (SNAP-Ed), assisting in the development and implementation of state-wide community-based programs. As a community health dietitian, Dr. Griffin worked as a Nutritionist with the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC). She was also the Wellness Director and Assistant Health Promotion Manager with Marine Corps Community Services, Okinawa where she developed and delivered an employee wellness program and several wide-scale community-based programs to the military, civilian and Japanese national residents in Okinawa, Japan.
Dr. Griffin’s research interests focus on using mobile health (mHealth) technologies such as text messaging, social media and email to develop, implement and deliver community-based nutrition and health promotion programs for limited-resource, minority and rural dwelling audiences. Dr. Griffin also is interested in promoting healthy retail programs in food deserts to improve the home food environment, especially in rural locations.
