Hitoshi Shirakawa is a Professor at Tohoku University, Sendai, Miyagi, Japan. He obtained his PhD degree in 1996 from Tohoku University for studies on the structure and molecular functions of the chromosomal protein HMG2. His current research is focused on the modulation of intracellular signaling by nutrients and other food ingredients, especially on the alternation of inflammatory response and steroidogenesis by vitamin K, biotin, and other food ingredients. He also investigates the effects of fermented rice bran extract supplementation on lifestyle-related diseases.
