Enrique Jacobo Díaz Montaña is a researcher and faculty member at the University of Seville (Universidad de Sevilla) in Spain, where he is associated with the Department of Analytical Chemistry within the Faculty of Pharmacy and participates in the SEXIA research group (AGR-104). He completed his degree in Pharmacy at the University of Seville in 2017 and went on to earn a Master’s in Professional Specialization in Pharmacy with a focus on Food and Health in 2018. He subsequently completed his doctoral studies in Analytical Chemistry at the University of Seville, defending his thesis in June 2023.

During his doctoral research, Dr. Díaz Montaña conducted predoctoral research stints at the Centre des Sciences du Goût et de l’Alimentation (CSGA) in Dijon, France, and at the University of Huelva, contributing toward an international doctorate distinction. His research focuses on lipid matrices and analytical chemistry, with particular emphasis on understanding the interaction of minor compounds in olive oil and their effects on aroma and sensory quality, and he has authored multiple scientific articles and book chapters as well as presented his work at national and international conferences. In addition to his research, he has been actively involved in teaching courses for degrees in Pharmacy, Optics and Optometry, Chemistry, and Chemical Engineering, and participates in innovation and scientific outreach activities.
