Dr. Poncelet is currently working as EncapProcess & Emeritus Professor at the University of Nantes. He was professor/researcher for 25 years in McGill University, Canada and then Food Engineering schools in France. Denis does research in Food Science, Bioengineering and Chemical Engineering. His working since 1986 on micro encapsulation. He is president of the association Bioencapsulation Research Group.
