Ana Carolina Almeida Gonçalves conferred a BSc degree in Biomedical Sciences in 2014 at the University of Beira Interior, in Covilhã, and an MSc degree in Biomedical Sciences at the same University mentioned previously. Currently, she is attending a Ph.D. degree in Biomedicine at Universidade da Beira Interior. She started to be a researcher in Project CENTRO-01-0247-FEDER-017547 at CICS-UBI, Covilhã, focusing on the biochemical characterization of sweet cherries. Nowadays, she possesses a Ph.D. grant supported by FCT - Foundation for Science and Technology (Lisbon, Portugal) (2020.04947.BD) also related to the biological potential of sweet cherries. Additionally, she is a teaching assistant at UBI, teaching practical classes in Biochemistry. Her research interests concern the biological screening of natural products, phenolic compounds, HPLC, in Vivo and in Vitro studies, pharmacodynamics, pharmacokinetics, interactions between drugs and natural/ food supplements, antioxidant, and antimicrobial capacities, and establishment of composition/ bioactivity relationships and ailments, like cancer, neurological and cardiovascular pathologies, and anti-inflammatory diseases, and other oxidative stress-related disorders.
