The starting point for dietary science is the multidimensional area of food and people's eating as well as the universalism of the area, ie. Food is essential for human survival. Furthermore, food is used in all cultures to express a kind of characteristic of humanity. This can e.g. be how distancing or belonging is expressed by which foods are eaten or not, as well as how they are prepared and meals are ritualized. Food is also an issue for work on public health and welfare, which means that food is of interest both socially and economically. Overall, the science / medical area dominates the undergraduate education.
